Easy Tidbits For Summer Entertaining

With summer coming to an end and a new “school” year ready to begin, I invited a group of lovely ladies I have been volunteering with over for a late summer get-together. 

Biting off some time consuming recipes for the main course and dessert, I wanted to serve tasty appetizers that would be impressive, but easy to make.  

Doing a quick survey of what I had on hand, I realized I had overbought farm fresh cherry tomatoes for another recipe and had some perfectly ripe avocados needing to be used.  These ingredients screamed the need for bacon to make a crowd favorite – Bacon Avocado Tomato Baguettes.  

When visiting the farmer’s market, I couldn’t resist the juicy blackberries that were in season.  For my second appetizer I decided on an interesting twist to a traditional caprese and switched out the tomatoes for blackberries.

Both got the exact reaction I was looking for – Ooh’s and Ahh’s when served and hardly any left overs.  It was a success for this dinner party and hopefully your next gathering as well. 

Bacon Avocado Tomato Baguettes

1 lbs. Bacon Ripe Avocado Thinly Sliced
7 Large Cherry Tomatoes Thinly Sliced
1 French Baguette Sliced (Tip: Have your bakery slice the baguette for easy even slices)
Mayonnaise

Before cooking, slice bacon in thirds.  This will make them the perfect bite size when cooked.  Cook bacon slices to desired crispness.  I like to cook my bacon on a cookie sheet in oven.  I find this to be a lot easier as it controls the splattering and also makes for perfectly crisp bacon.

Once bacon is cooked and cooled a bit, it is time to assemble.  Spread mayonnaise on baguette slices, top with bacon, avocado and finally a slice of tomato.  Serve!

Blackberry Caprese 

1 Pint Blackberries
1 Container Small Mozzarella Balls 
Fresh Basil (you will need one medium to large leaf per serving)
1/2 Cup Store Purchased Olive Oil Vinaigrette Dressing 
1 Tbsp. Honey
Toothpicks

To begin, whisk together vinaigrette and honey.  Once combined, add mozzarella balls, making sure each ball is well coated with the dressing.  Refrigerate for 30 minutes to allow the cheese to marinate.

To assemble, partially wrap each mozzarella ball with a clean and dry basil leaf, and skewer with a toothpick.

Cap off the toothpick with a blackberry.  Enjoy!
